Ingredients

  • 2 medium zucchini
  • 3 medium red potatoes
  • 2 tsp oil
  • 1 small onion, chopped
  • 1 large ripe tomato, diced
  • 1 cup chicken broth
  • 1 tsp parsley, chopped
  • 1/4 tsp rosemary
  • 1/4 tsp oregano

Instructions

  1. Cut unpeeled potatoes and zucchini into 1/2-inch pieces.
  2. Heat oil in a skillet over medium heat.
  3. Add potatoes and stir-fry for 1 to 2 minutes.
  4. Pour in chicken broth and cover the skillet.
  5. Cook over low heat for 5 minutes.
  6. Add chopped onion, zucchini, diced tomato, parsley, rosemary, and oregano.
  7. Stir to combine.
  8. Cover and cook until vegetables are tender.
