Tips & Substitutions
For a twist, try substituting the chicken breasts with turkey or even a plant-based protein for a vegetarian option. If you prefer a spicier flavor, add red pepper flakes to the ground beef mixture. Ensure the chicken is flattened evenly for even cooking and flavor absorption. You can also use Greek yogurt instead of the egg for added moisture and tanginess.
Serving Suggestions
Serve the chicken breast medallions with a side of Deluxe Rice Pilaf for a satisfying meal. A fresh salad or steamed vegetables can add a crisp contrast. You can also pair them with Carrot Puree With Kalamata Olives for a flavorful side. Garnish with extra parsley for a fresh touch.
Storage & Reheating
Store any leftover chicken breast medallions in an airtight container in the refrigerator for up to 3 days. To reheat, place in a microwave or oven until warmed through, adding a splash of water to keep them moist. For best results, reheat gently to avoid drying them out.

Frequently Asked Questions
Can I prepare the chicken breast medallions in advance?
Yes, you can marinate the chicken and prepare the beef mixture a day ahead. Just assemble and cook them when you're ready to serve. This can enhance the flavors as they sit together.
What can I use instead of chicken bouillon powder?
You can substitute chicken bouillon powder with homemade chicken stock or vegetable broth. Adjust the salt levels accordingly, as stock may be less concentrated than bouillon.
Is there a way to make this recipe gluten-free?
Absolutely! Replace the oatmeal with gluten-free breadcrumbs or ground oats. Ensure that the chicken bouillon powder you use is also gluten-free, as some brands may contain gluten.
