Zucchini Au Gratin

- Blanch zucchini in boiling salted water for 8 minutes; drain.
- Cut a slice off the top of each zucchini lengthwise.
- Scoop out the flesh, leaving a ¼-inch rim around the edge.
- Roughly chop the zucchini flesh and the top slices.
- Turn zucchini shells upside down to drain.
- Fry chopped onion in 2 tablespoons of butter until light brown.
- Add chopped zucchini and cook on high for a few minutes.
- Add drained sweet corn and season well with salt and pepper.
- Place zucchini shells in a shallow, ovenproof dish and fill with the corn mixture.
- Bake until heated through and the cheese is melted and golden.
