Zucchini Au Gratin

Creamy zucchini au gratin features tender zucchini shells filled with a flavorful corn and onion mixture, topped with melted Cheddar, perfect for comforting family dinners.

Ingredients

  • 6 medium zucchini
  • 1 small onion
  • 2 oz. butter
  • 1 (7 oz.) can sweet corn
  • salt
  • pepper
  • 2 Tbsp. flour
  • ½ pt. milk

Instructions

  1. Blanch zucchini in boiling salted water for 8 minutes; drain.
  2. Cut a slice off the top of each zucchini lengthwise.
  3. Scoop out the flesh, leaving a ¼-inch rim around the edge.
  4. Roughly chop the zucchini flesh and the top slices.
  5. Turn zucchini shells upside down to drain.
  6. Fry chopped onion in 2 tablespoons of butter until light brown.
  7. Add chopped zucchini and cook on high for a few minutes.
  8. Add drained sweet corn and season well with salt and pepper.
  9. Place zucchini shells in a shallow, ovenproof dish and fill with the corn mixture.
  10. Bake until heated through and the cheese is melted and golden.
