Ingredients

  • 1 lb. zucchini
  • 1/4 cup chopped onion
  • 1 tablespoon butter
  • 2 beaten eggs
  • 2 cups frozen corn, cooked and drained
  • 1 cup shredded processed Swiss cheese
  • 1/4 teaspoon salt
  • 1/4 cup fine dry bread crumbs
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Slice zucchini about 1 inch thick.
  2. Cook zucchini until tender; drain and mash with a fork.
  3. Cook onion in 1 tablespoon butter until tender.
  4. Combine beaten eggs, mashed zucchini, cooked onion, corn, Swiss cheese, and salt.
  5. Turn the mixture into a 1-quart casserole dish.
  6. Combine bread crumbs, Parmesan cheese, and the remaining tablespoon butter.
  7. Sprinkle the bread crumb mixture on top of the corn mixture.
  8. Bake on a baking sheet for 40 minutes at 350°F (175°C).
  9. Let stand for 5 to 10 minutes before serving.
  10. Garnish with chopped fresh tomatoes.
