Ingredients

  • 4 cups grated zucchini
  • 4 eggs
  • 1/2 cup Crisco
  • 1 cup chopped nuts
  • 3 1/2 cups flour
  • 3 cups sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

Instructions

  1. Mix grated zucchini, eggs, and oil in a bowl.
  2. In a large bowl, combine flour, sugar, cinnamon, baking powder, baking soda, and salt.
  3. Add zucchini mixture to the dry ingredients and stir until just moistened.
  4. Add vanilla extract and mix well.
  5. Pour batter into two greased and floured 9 x 5-inch loaf pans.
  6. Bake at 350°F (175°C) for approximately 1 hour, or until a toothpick inserted into the center comes out clean.
