Ingredients

  • 9 medium zucchini
  • salt
  • 1 medium onion
  • butter
  • 2 eggs
  • 1/2 cup half and half
  • 1 1/2 cups grated Cheddar cheese
  • 3/4 cup Italian style bread crumbs

Instructions

  1. Boil the sliced zucchini in salted water and mash it coarsely.
  2. Saute the chopped onion in butter until translucent.
  3. Combine the mashed zucchini, sautéed onion, beaten eggs, half and half, grated Cheddar cheese, and bread crumbs in a greased casserole dish.
  4. Sprinkle additional bread crumbs on top of the mixture.
  5. Bake at 350°F (175°C) for 1 hour until golden and bubbly.
