- Boil the sliced zucchini in salted water and mash it coarsely.
- Saute the chopped onion in butter until translucent.
- Combine the mashed zucchini, sautéed onion, beaten eggs, half and half, grated Cheddar cheese, and bread crumbs in a greased casserole dish.
- Sprinkle additional bread crumbs on top of the mixture.
- Bake at 350°F (175°C) for 1 hour until golden and bubbly.
