Zucchini Chip Snack Cake
Ingredients
- 1/2 cup butter, softened ⓘ
- 1-3/4 cups sugar ⓘ
- 2 large eggs ⓘ
- 1/2 cup canola oil ⓘ
- 1 teaspoon vanilla extract
- 2-1/2 cups all-purpose flour ⓘ
- 2 tablespoons baking cocoa ⓘ
- 1 teaspoon baking soda ⓘ
- 1/2 teaspoon baking powder ⓘ
- 1/2 teaspoon ground cinnamon ⓘ
- 1/2 teaspoon ground cloves ⓘ
- 1/2 cup buttermilk ⓘ
- 2 cups shredded peeled zucchini ⓘ
- 2 cups (12 ounces) semisweet chocolate chips ⓘ
Instructions
- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in oil and vanilla. Combine dry ingredients; add to creamed mixture alternately with buttermilk, beating well after each addition. Stir in zucchini.
