Ingredients

  • 1/2 cup all-purpose flour
  • 1 teaspoon onion salt
  • 1/2 teaspoon ground oregano
  • 1/4 teaspoon garlic powder
  • 1 slightly beaten egg
  • 1/3 cup milk
  • 1 tablespoon olive oil
  • 3 medium zucchini
  • 4 cups Corn Chex cereal, crushed to 1 cup

Instructions

  1. In a medium bowl, combine flour, onion salt, ground oregano, and garlic powder.
  2. Add the beaten egg, milk, and olive oil; mix until smooth.
  3. Cut each zucchini in halves crosswise, then into 8 wedges to form fries; remove seeds from zucchini.
  4. Dip each zucchini fry into the flour mixture, allowing excess to drain off, then roll in crushed cereal to coat all sides.
  5. Fry the coated zucchini fries in deep hot fat at 360°F for about 2 minutes, or until golden brown.
  6. Drain on paper towels and serve hot.
