Zucchini Fruit Loaf
Ingredients
- 3 eggs ⓘ
- 1 c. oil ⓘ
- 2 c. sugar ⓘ
- 2 tsp. vanilla ⓘ
- 2 c. grated zucchini ⓘ
- 1 c. canned fruit, well drained (crushed pineapple, peaches, pears; I use applesauce) ⓘ
- 3 c. all-purpose flour ⓘ
- 2 tsp. baking soda ⓘ
- 1/2 tsp. baking powder ⓘ
- 1 tsp. salt ⓘ
- 1 1/2 tsp. cinnamon ⓘ
- 1 tsp. nutmeg ⓘ
- 1 c. nuts ⓘ
- 1 c. raisins ⓘ
Instructions
- Beat together the eggs, oil, sugar and vanilla until thick and foamy.
- Add the zucchini and well drained fruit of your choice. Combine the dry ingredients with nuts and raisins.
- Add to the zucchini mixture.
- Divide between loaf pans and bake for 1 hour. Cool in pans for 10 minutes before cooling on wire racks.
