Zucchini Fruit Loaf

Ingredients

  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 2 tsp. vanilla
  • 2 c. grated zucchini
  • 1 c. canned fruit, well drained (crushed pineapple, peaches, pears; I use applesauce)
  • 3 c. all-purpose flour
  • 2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 c. nuts
  • 1 c. raisins

Instructions

  1. Beat together the eggs, oil, sugar and vanilla until thick and foamy.
  2. Add the zucchini and well drained fruit of your choice. Combine the dry ingredients with nuts and raisins.
  3. Add to the zucchini mixture.
  4. Divide between loaf pans and bake for 1 hour. Cool in pans for 10 minutes before cooling on wire racks.
