Ingredients

  • 2 cups zucchini, sliced or diced
  • 2 tomatoes, sliced or diced
  • 1 onion, sliced or diced
  • 8 oz cheese
  • 1 1/2 cups milk
  • 3/4 cup Bisquick
  • 3 eggs
  • salt
  • pepper

Instructions

  1. Slice or dice the zucchini, tomatoes, and onion.
  2. Place the prepared vegetables in a greased 10-inch pie plate.
  3. Sprinkle cheese over the vegetables.
  4. In a blender, mix the milk, Bisquick, eggs, salt, and pepper until well combined.
  5. Pour the mixture over the vegetables and cheese in the pie plate.
  6. Bake at 400°F (200°C) for 40 minutes until set and golden.
