Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/4 teaspoon cloves
  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup oil
  • 2 teaspoons vanilla
  • 1 1/2 cups shredded yellow squash or zucchini

Instructions

  1. Combine dry ingredients and set aside.
  2. In a large bowl, combine eggs, sugar, oil, and vanilla.
  3. Beat well with a mixer.
  4. Stir in the shredded zucchini or yellow squash.
  5. Add the dry ingredients, stirring only until moistened.
  6. Pour the batter into a greased and floured 9 x 5 x 3-inch loaf pan.
  7. Bake at 350°F (175°C) for 50 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the loaf remain in the pan for 10 minutes, then remove and cool.
