Ingredients

  • 5 Tbsp. olive oil
  • 2 medium zucchini
  • 2 medium potatoes
  • 2 medium onions
  • 2 fresh tomatoes
  • 1 green pepper
  • salt
  • pepper

Instructions

  1. Place olive oil in a large saucepan.
  2. Add cubed zucchini, potatoes, sliced onions, cubed tomatoes, and cubed green pepper.
  3. Season with salt and pepper to taste.
  4. Let simmer, covered, until all vegetables are tender, about 30 minutes.
  5. Sprinkle with grated Parmesan cheese just before serving.
