Ingredients

  • 1 medium onion, thinly sliced
  • 1 Tbsp vegetable oil
  • 1 1/2 lb zucchini, thinly sliced
  • 1 (14 1/2 oz) can whole peeled tomatoes, drained and cut up
  • 2 Tbsp diced green chiles
  • 1 tsp seasoned salt
  • 3/4 tsp garlic powder
  • 1/2 tsp seasoned pepper
  • 1 cup Monterey Jack cheese

Instructions

  1. In a medium skillet, sauté the sliced onion in vegetable oil until translucent.
  2. Add the sliced zucchini, drained and chopped tomatoes, diced green chiles, seasoned salt, garlic powder, and seasoned pepper to the skillet.
  3. Bring the mixture to a boil, then reduce heat and simmer uncovered for 5 to 10 minutes.
  4. Transfer the zucchini mixture to an 8-inch square baking dish and spread evenly.
  5. Top with shredded Monterey Jack cheese.
  6. Bake uncovered in a 375°F oven for 10 minutes, or until the cheese melts and is bubbly.
