Ingredients

  • 1/2 to 1 lb. sweet Italian sausage or turkey sausage
  • 6 medium zucchini, trimmed and sliced 1/4 inch thick
  • 1 small onion, chopped
  • 1 can (8 oz.) tomato sauce with cheese
  • 1 tsp. sugar
  • 1 pkg. Equal
  • 1/4 tsp. garlic salt
  • 1/2 tsp. leaf oregano, crumbled

Instructions

  1. Remove casing from sausage and crumble the meat.
  2. Saute the sausage in a medium-sized frying pan for 10 minutes or until browned.
  3. Remove the sausage with a slotted spoon and set aside.
  4. Pour off the drippings, then measure 1 tablespoon of the drippings and return it to the pan.
  5. Stir in the zucchini and onion, then saute for 5 minutes.
  6. Add the tomato sauce, sugar, garlic salt, oregano, and seasoned pepper, and stir to combine.
  7. Place the cooked sausage on top of the vegetable mixture, cover the pan.
  8. Cook slowly for 15 minutes or until the zucchini is slightly tender.
