Ingredients

  • 2 1/2 to 3 lb. rabbit, quartered
  • 4 Tbsp. olive oil
  • 2 medium onions, peeled and chopped
  • 3 garlic cloves, minced
  • 28 oz. can crushed tomatoes
  • 6 oz. can tomato paste
  • 1 cup red wine
  • 2 tsp. balsamic vinegar
  • 1 tsp. oregano
  • 1 tsp. sweet basil
  • 1 tsp. rosemary
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat 4 tablespoons of olive oil in a large casserole dish over medium heat.
  3. Add the quartered rabbit pieces and brown them on all sides.
  4. Remove the rabbit and set aside.
  5. In the same dish, add chopped onions and minced garlic; cook until softened.
  6. Stir in crushed tomatoes, tomato paste, red wine, balsamic vinegar, oregano, basil, rosemary, salt, and pepper.
  7. Return the rabbit to the casserole dish, ensuring it is covered with the sauce.
  8. Cover the dish and bake in the preheated oven for about 1 hour and 30 minutes, until the rabbit is tender and cooked through.
