Zucchini Monterey

Ingredients

  • 1 lb. browned ground beef
  • 1 small chopped onion
  • 4 diced zucchini
  • 3 c. cooked rice
  • 1 can chopped green chilies
  • 1 tsp. salt
  • 2 cloves minced garlic
  • 1/2 tsp. chili powder
  • 2 diced tomatoes
  • 2 c. grated Monterey Jack cheese
  • 1 c. sour cream
  • corn chips, crushed

Instructions

  1. Brown the ground beef with the onion, then add the zucchini and cook until tender, then add rice, green chilies, salt, garlic, chili powder, tomatoes, cheese and sour cream.
  2. Mix all together and put in a 9 x 13-inch pan.
  3. Cover with crushed corn chips. Bake at 350° for 20 minutes.
