Zucchini Nut Bread(Makes 2 Loaves)

Ingredients

  • 3 c. sifted flour
  • 1 1/2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 3 eggs
  • 2 c. sugar
  • 1 c. Wesson oil
  • 1 Tbsp. vanilla
  • 2 c. grated, unpeeled zucchini squash
  • 1/2 c. chopped nuts

Instructions

  1. Sift together flour, cinnamon, baking soda, salt and baking powder.
  2. Beat eggs well.
  3. Gradually add sugar and oil, mixing well.
  4. Add vanilla and dry ingredients; blend well.
  5. Stir in zucchini.
  6. Combine nuts with 1 teaspoon flour; stir into batter. Pour into loaf pans.
  7. Sprinkle on topping.
  8. Bake at 350° for one hour.
