Ingredients

  • 1 medium zucchini, sliced
  • 1 medium onion, chopped
  • 8 oz. sharp Cheddar cheese, grated
  • 1/2 cup oil
  • 3 eggs
  • 1 1/4 cups Bisquick
  • salt

Instructions

  1. Put sliced zucchini in a casserole dish.
  2. Mix chopped onion and grated Cheddar cheese together.
  3. In a separate bowl, mix oil and eggs together, then add Bisquick.
  4. Combine the oil mixture with the cheese mixture and season with salt and pepper.
  5. Add the zucchini to the mixture and mix well.
  6. Pour the mixture into a baking dish and bake at 350°F for 40 minutes or until puffy and brown.
