Ingredients

  • 10 c. ground zucchini
  • 4 c. onions
  • 4 Tbsp. coarse salt
  • 2 1/2 c. white vinegar
  • 1 Tbsp. nutmeg
  • 1 Tbsp. dry mustard
  • 1 Tbsp. turmeric
  • 1 Tbsp. cornstarch

Instructions

  1. Put zucchini, onion, and salt in a large bowl and mix well.
  2. Let stand overnight.
  3. Drain and rinse in cold water; drain again.
  4. Put the mixture in a large kettle with remaining ingredients.
  5. Bring to a boil and simmer, uncovered, stirring occasionally for 30 minutes.
  6. Pour into jars and seal.
  7. Process in boiling water bath for 5 minutes.
