Ingredients

  • 4 cups zucchini, thinly sliced
  • 1 cup sliced onion
  • 2 cups canned tomatoes with juice
  • 3/4 cup drained canned mushrooms
  • salt to taste
  • pepper to taste

Instructions

  1. Saute the zucchini and onion in a small amount of oil.
  2. Add the canned tomatoes with juice, drained mushrooms, salt, pepper, and oregano to taste, along with cooked chicken, ground beef, or turkey.
  3. Simmer just until heated through.
  4. Serve in soup bowls and sprinkle with Parmesan cheese.
