Ingredients

  • 2 c. sugar
  • 1 c. oil
  • 3 eggs
  • 3 tsp. vanilla
  • 2 c. zucchini, grated
  • 3 c. flour
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1/4 tsp. baking powder

Instructions

  1. Mix sugar, oil, and eggs together, then add vanilla and grated zucchini.
  2. Add flour, baking soda, cinnamon, salt, and baking powder to the mixture.
  3. Spoon half of the batter into a greased and floured Bundt pan or 11 x 13-inch pan.
  4. Sprinkle streusel mix over the batter.
  5. Spoon the remaining batter on top of the streusel.
  6. Bake at 350°F for 55 to 60 minutes.
