Ingredients

  • 2 1/2 to 3 cups grated zucchini
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 8 oz. block Cheddar cheese, grated
  • 1 1/2 cups milk
  • 1 cup Bisquick
  • 3 eggs

Instructions

  1. Beat eggs, milk, and Bisquick until smooth.
  2. Add grated zucchini, chopped onion, chopped green pepper, and grated Cheddar cheese.
  3. Mix well to combine all ingredients.
  4. Pour the mixture into a greased 15-inch cookie sheet.
  5. Bake uncovered in a 350°F (175°C) oven for 45 minutes.
