Ingredients

  • 1 sheet prepared pie dough
  • 1/2 lb. zucchini
  • 1/4 tsp. salt
  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 1/4 tsp. nutmeg
  • 1/8 tsp. pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Fit the prepared pie dough into a 9-inch tart pan.
  3. Line the shell with a double thickness of aluminum foil and bake for 15 minutes.
  4. Remove the foil and bake until the edges brown, about 10 to 15 minutes.
  5. Grate the zucchini and toss with salt. Drain and blot with paper towels to remove excess moisture.
  6. In a bowl, beat the eggs and stir in the milk and heavy cream.
  7. Cream together the nutmeg and pepper.
  8. Sprinkle half of the grated cheese into the tart shell.
  9. Layer the grated zucchini over the cheese.
  10. Pour the egg and cream mixture over the zucchini and top with the remaining cheese.
  11. Bake until the tart is puffed and golden, about 35 to 40 minutes.
