Ingredients

  • 1 small pkg lemon jello
  • 1 cup boiling water
  • 1 (10 1/2 oz) pkg mini marshmallows
  • 1/2 pint whipping cream
  • 1 can crushed pineapple
  • 1 (8 oz) pkg cream cheese
  • 1 large raspberry jello
  • 1 cup boiling water

Instructions

  1. Mix lemon jello with boiling water and stir until dissolved.
  2. Drain pineapple and heat its juice to boiling.
  3. Add mini marshmallows to the hot juice and stir until completely dissolved.
  4. Allow the mixture to cool slightly, then add it to the lemon jello mixture.
  5. Soften the cream cheese and beat until smooth, then add crushed pineapple.
  6. Combine the cream cheese mixture with the lemon jello mixture.
  7. Whip the whipping cream until stiff peaks form and fold into the lemon mixture.
  8. Pour the lemon mixture into a large glass oblong pan and refrigerate until set.
  9. Dissolve raspberry jello in boiling water, then add almost thawed raspberries.
  10. Carefully spoon or pour the raspberry mixture over the lemon jello layer and refrigerate until firm.
