Ingredients

  • 1 can red kidney beans, drained and rinsed
  • 1 can lima beans with ham
  • 1 can sweet corn with red and green peppers, drained
  • 1/4 cup olive oil
  • 1/4 cup cider vinegar
  • 2 tablespoons chopped parsley
  • 1 garlic clove, crushed
  • 1 tablespoon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon red hot pepper sauce
  • 1/4 teaspoon salt

Instructions

  1. Stir together the drained and rinsed red kidney beans, lima beans with ham, and drained sweet corn with red and green peppers.
  2. In a small bowl, combine olive oil, cider vinegar, chopped parsley, crushed garlic, mustard, Worcestershire sauce, red hot pepper sauce, salt, and pepper. Whisk until well blended.
  3. Pour the vinaigrette over the bean mixture and toss lightly, being careful not to break apart the beans.
  4. Chill the salad for at least 2 hours.
  5. Remove and discard the garlic before serving.
