Ingredients

  • 4 or 5 yellow squash
  • 1½ packages saltine crackers
  • 2 sticks butter
  • 1 can cream of mushroom soup
  • 1 medium onion

Instructions

  1. Slice the yellow squash and boil until tender, then drain well.
  2. Melt 2 sticks of butter and sauté the chopped medium onion until tender.
  3. Crumble 1½ packages of saltine crackers in a bowl.
  4. Pour the buttered onions over the crackers and mix until well coated.
  5. In an 8 x 8 inch baking dish, layer the boiled squash, add the butter‑onion‑cracker mixture, and pour 1 can of cream of mushroom soup over the top.
  6. Bake in a preheated oven at 350°F (175°C) for 25–30 minutes, or until the top is golden and bubbly.
