Ingredients

  • 1/2 lb. ground beef
  • 1 can mushrooms
  • 15 oz. jar spaghetti sauce
  • 8 manicotti noodles
  • 2 eggs
  • 1/2 lb. shredded Mozzarella cheese
  • 1/2 cup cottage cheese
  • 2 tablespoons Parmesan cheese
  • 2 tablespoons soft butter
  • 1/2 teaspoon salt

Instructions

  1. Brown the ground beef in a skillet.
  2. Add the can of mushrooms and the jar of spaghetti sauce. Simmer the mixture while preparing the noodles.
  3. Cook the manicotti noodles according to the package directions.
  4. Drain the cooked noodles and let them cool slightly.
  5. In a bowl, beat the eggs and mix in the shredded mozzarella, cottage cheese, Parmesan cheese, softened butter, salt, and pepper.
  6. Stuff the cooked manicotti shells with the cheese mixture.
  7. Place the stuffed shells in a baking dish, spoon the meat sauce over the top, and bake until bubbly and heated through.
