Ingredients

  • 2 c. boiling water
  • 2 c. 40% bran flakes
  • 1 c. shortening
  • 4 eggs
  • 1 qt. buttermilk
  • 5 c. flour
  • 5 tsp. soda
  • 1 tsp. salt
  • 2 1/2 c. sugar
  • 4 c. Bran Buds

Instructions

  1. Combine boiling water and bran flakes; cool.
  2. Add shortening and eggs; beat well.
  3. Add buttermilk.
  4. In another bowl, sift flour, soda, salt, and sugar.
  5. Fold the dry mixture into the wet mixture.
  6. Add Bran Buds and nuts.
  7. Store in a covered container in the refrigerator.
  8. Use within 7 weeks.
  9. Just before baking, add chocolate chips if desired.
  10. Pour batter into muffin tins and bake at 375°F for 20 minutes.
