Ingredients

  • 1 can (17 oz.) cream-style corn
  • 1/2 c. brown sugar
  • 3/4 c. sugar
  • 3 eggs
  • 1 c. oil
  • 1/2 c. raisins
  • 1/2 c. pecans or walnuts
  • 2 1/4 c. flour
  • 1 tsp. cinnamon
  • 1 tsp. soda
  • 1 tsp. salt
  • 3 tsp. baking powder

Instructions

  1. Preheat oven to 350°.
  2. In mixing bowl, mix corn, brown sugar and sugar.
  3. Beat in eggs, one at a time.
  4. Add oil and beat until well mixed.
  5. Stir in raisins and nuts.
  6. Sift together dry ingredients; add to liquids all at one time and stir until well blended.
  7. Pour into greased 9 x 13-inch pan.
  8. Bake 35 to 40 minutes (until tests done).
  9. (Cake may also be baked in 2 layer pans.)
  10. Frost with caramel or cream cheese frosting.
