Ingredients

  • 1 small box lemon jello
  • 1 (No. 2) can crushed pineapple
  • 1 large Philadelphia cream cheese
  • 1 small Philadelphia cream cheese
  • 1 small can pimento
  • 1/2 cup chopped pecans
  • 1 cup chopped celery

Instructions

  1. Boil 1 cup of pineapple juice.
  2. Dissolve the small box of lemon jello in the hot pineapple juice and let it cool.
  3. Mix the cream cheese, crushed pineapple, chopped pimento, chopped pecans, and chopped celery in a bowl.
  4. Add the mixture to the cooled jello.
  5. Stir thoroughly, then fold in the whipped cream.
  6. Pour into a mold or dish and let it congeal in the refrigerator.
  7. Cut into squares and serve on lettuce leaves with a cherry on top.
