Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup onion, chopped
  • 3 cloves garlic, minced
  • 1 (49.5 fluid ounce) can chicken broth
  • 1 (16 ounce) package frozen peas and carrots
  • 1 tablespoon ground thyme
  • 1 tablespoon dried parsley
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 2 cups skinless, boneless chicken breast, cut into small cubes
  • 1 cup uncooked alphabet pasta

Instructions

  1. Heat a large saucepan over medium heat. Add oil, onion, and garlic. Cook until onions are translucent, 3 to 5 minutes. Add chicken broth, peas and carrots, thyme, parsley, salt, and black pepper and bring to a boil. Add chicken and pasta. Reduce heat to a simmer and cook until chicken is opaque throughout and pasta is tender, 5 to 10 minutes. Season with salt and pepper.
