  2. Add sliced mushrooms and cook until browned, about a minute or two.
  3. Add chicken breasts and brown on both sides.
  4. Pour in white wine and canned tomatoes.
  5. Add seasonings such as tarragon, paprika, basil, oregano, pepper, and Dijon mustard to taste.
  6. Add artichoke hearts around the chicken, spreading them out evenly.
  7. Stir in a tablespoon each of Dijon mustard and capers.
  8. Reduce heat to low and simmer for 10 to 20 minutes, or until chicken is cooked through but tender.
