Ingredients

  • 2 c. unsifted flour
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 tsp. sugar
  • 1 Tbsp. melted shortening
  • 2 eggs, separated
  • 2 c. buttermilk

Instructions

  1. Stir all ingredients together, adding soda to the buttermilk before mixing.
  2. Beat the egg whites separately until stiff peaks form.
  3. Fold the beaten egg whites into the batter gently.
  4. Cook the batter in a special pan or as pancakes on a griddle.
  5. Serve hot with syrup, jello, brown sugar, or your favorite toppings.
