Ingredients

  • 1 1/2 lb. shrimp
  • 2 oranges, peeled and sliced
  • 1 small onion, sliced
  • 1 c. vegetable oil
  • 1/3 c. sugar
  • 1/3 c. fresh lemon juice
  • 1 Tbsp. paprika
  • 2 tsp. dry mustard
  • 2 cloves garlic, crushed
  • 2 tsp. salt
  • 1/4 tsp. crushed red chilies
  • 2 Tbsp. vinegar

Instructions

  1. Simmer shrimp in seasoned water until opaque.
  2. Drain and cool under running water.
  3. Layer cooked shrimp, orange slices, and onion in a serving dish.
  4. Combine vegetable oil, vinegar, lemon juice, sugar, paprika, mustard, garlic, salt, and red chilies to make the marinade.
  5. Pour the marinade over the layered shrimp, cover, and refrigerate to marinate for 1 hour.
  6. Arrange shrimp, orange slices, and onions on a platter to serve.
