- In a 1 1/2-quart casserole, mix half of the salsa with chili powder.
- Toss with seafood, diced tomato, green pepper, and green onion.
- Microwave on High for 2 to 3 minutes, then set aside.
- Wrap a stack of tortillas in damp paper towels.
- Microwave on High for 1 1/2 to 2 minutes.
- Divide the seafood mixture among 8 tortillas and sprinkle with shredded Monterey Jack cheese.
- Fold the bottom of each tortilla up to partially cover the filling.
- Fold in the sides to meet and roll over the top to close.
- Place seam-side down in a baking dish and microwave for 2 to 4 minutes.
- Serve hot with remaining salsa and sour cream.
