Seafood burritos feature flaky crab meat, fresh vegetables, and melted cheese wrapped in warm tortillas, perfect for a flavorful and satisfying meal for seafood lovers.

Ingredients

  • 10 oz. jar salsa
  • 2 tsp. chili powder
  • 16 oz. crab meat
  • 1 large tomato
  • 1/2 cup green pepper
  • 2 green onions
  • 8 flour tortillas
  • 1/2 cup shredded Monterey Jack cheese
  • 2 cups shredded lettuce
  • 8 tbsp. nonfat sour cream

Instructions

  1. In a 1 1/2-quart casserole, mix half of the salsa with chili powder.
  2. Toss with seafood, diced tomato, green pepper, and green onion.
  3. Microwave on High for 2 to 3 minutes, then set aside.
  4. Wrap a stack of tortillas in damp paper towels.
  5. Microwave on High for 1 1/2 to 2 minutes.
  6. Divide the seafood mixture among 8 tortillas and sprinkle with shredded Monterey Jack cheese.
  7. Fold the bottom of each tortilla up to partially cover the filling.
  8. Fold in the sides to meet and roll over the top to close.
  9. Place seam-side down in a baking dish and microwave for 2 to 4 minutes.
  10. Serve hot with remaining salsa and sour cream.
