Ingredients

  • 4 to 5 cups zucchini, sliced 1/4-inch thick
  • 1 1/2 cups Bisquick
  • 1 1/2 cups Cheddar cheese, shredded
  • 1/4 cup onion, chopped
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (8 oz.) can tomato sauce

Instructions

  1. Combine all ingredients except tomato sauce and mix together in a large bowl.
  2. Place the mixture into a greased 9 x 11-inch glass baking dish.
  3. Pour tomato sauce on top.
  4. Bake at 350°F (175°C) for 40 minutes or until set.
