Ingredients

  • 9 half chicken breasts, skinned and boned
  • 1 garlic clove, minced
  • 1 onion, diced
  • 2 Tbsp. oil
  • 1/8 to 1/4 c. vinegar
  • 2/3 to 3/4 c. low sodium soy sauce
  • 1 (16 oz.) can or 2 large fresh tomatoes
  • 1 1/2 c. water

Instructions

  1. Brown chicken breasts in oil with minced garlic and diced onion.
  2. Add vinegar, soy sauce, tomatoes, and water to the skillet.
  3. Simmer uncovered for 45 to 60 minutes or until chicken is cooked through and flavors meld.
  4. Serve hot over or with rice.
