Sweet and indulgent baked sweet potatoes with coconut, brown sugar, and crunchy cornflake topping, perfect for holiday gatherings and comforting family dinners.

Ingredients

  • 4 cups cooled sweet potatoes
  • 1 stick butter, melted
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 cup coconut
  • 2 beaten eggs
  • 1 cup crushed cornflakes
  • 1/2 cup brown sugar

Instructions

  1. Whip the cooled sweet potatoes until smooth.
  2. Add the melted butter, sugar, brown sugar, coconut, and beaten eggs to the sweet potatoes and mix well.
  3. Transfer the mixture to a baking dish.
  4. Top with crushed cornflakes, additional brown sugar, pecans, and small pieces of butter.
  5. Bake at 350°F for 30 minutes until warmed through and golden on top.
