Instructions
- Saute chopped onion, green pepper, and mushrooms in butter until browned.
- Add frozen shredded potatoes and cook until potatoes are done.
- Brown and drain the sausage.
- Beat eggs with salt.
- Add beaten eggs to cooked sausage and cook until eggs are nearly set.
- Pour mixture into an 8 x 12-inch casserole dish and add potato mixture.
- Top with grated sharp Cheddar cheese.
- Bake at 350°F until cheese is melted, approximately 15 minutes.
