A hearty, cheesy breakfast casserole loaded with sausage, potatoes, vegetables, and eggs, perfect for feeding a crowd and starting the day with bold flavors.

Ingredients

  • 1 onion, chopped
  • 1 green pepper, chopped
  • 2 cans mushrooms
  • 5 Tbsp. butter
  • 1 lb. sausage, browned, drained
  • 5 c. shredded potatoes, cooked
  • 6 eggs, beaten
  • 1/2 tsp. salt
  • 1 c. grated sharp Cheddar cheese

Instructions

  1. Saute chopped onion, green pepper, and mushrooms in butter until browned.
  2. Add frozen shredded potatoes and cook until potatoes are done.
  3. Brown and drain the sausage.
  4. Beat eggs with salt.
  5. Add beaten eggs to cooked sausage and cook until eggs are nearly set.
  6. Pour mixture into an 8 x 12-inch casserole dish and add potato mixture.
  7. Top with grated sharp Cheddar cheese.
  8. Bake at 350°F until cheese is melted, approximately 15 minutes.
