Ingredients
- 3 lb. alligator, cubed
- 1/4 c. butter ⓘ
- 2 c. finely chopped onion ⓘ
- 2 c. finely chopped celery ⓘ
- 2 c. finely chopped bell pepper ⓘ
- 3 tsp. finely minced garlic ⓘ
- 1 bay leaf ⓘ
- 2 tsp. white pepper ⓘ
- 2 tsp. cayenne pepper ⓘ
- 1 tsp. black pepper ⓘ
- 1 tsp. Tabasco sauce ⓘ
- 3 Tbsp. crushed red pepper ⓘ
- 1 Tbsp. dried thyme leaves ⓘ
- 3 cans whole tomatoes, crushed ⓘ
- 3 cans tomato sauce ⓘ
- 1 large can tomato paste ⓘ
Instructions
- In a large skillet, melt butter and sauté the alligator cubes for about 5 minutes.
- Add chopped celery, onion, and bell pepper; sauté until tender, stirring to prevent burning.
- Add the remaining ingredients and cook until the alligator is tender and the liquids reach the consistency of a nice pasta sauce.
- Serve over rice and enjoy.
