- Preheat oven and grease four 8 or 9-inch cake pans, then lightly flour them.
- In a large mixing bowl, combine sugar, buttermilk, baking soda, and melted margarine.
- Gradually add all-purpose flour and allspice, mixing well until smooth.
- In a separate bowl, beat the egg yolks and fold into the batter.
- In another bowl, beat the egg whites until stiff peaks form and gently fold into the batter.
- Divide the batter evenly among the prepared cake pans.
- Bake in the preheated oven for approximately 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Once cooled, spread jelly or jam between layers and over the top.
- Sprinkle raisins over the icing or incorporate into the batter as desired.
