Almonation Cake is a moist, spiced dessert layered with jam and raisins, perfect for special occasions or teatime, offering rich flavors of cinnamon, allspice, and fruity sweetness.

Ingredients

  • 2 c. sugar
  • 1 c. buttermilk
  • 2 tsp. baking soda
  • 3 sticks margarine, melted
  • 4 c. all-purpose flour
  • 4 egg yolks
  • 12 egg whites
  • 1 tsp. allspice
  • 1 Tbsp. cinnamon
  • 1 pt. jelly or jam
  • 1 c. raisins

Instructions

  1. Preheat oven and grease four 8 or 9-inch cake pans, then lightly flour them.
  2. In a large mixing bowl, combine sugar, buttermilk, baking soda, and melted margarine.
  3. Gradually add all-purpose flour and allspice, mixing well until smooth.
  4. In a separate bowl, beat the egg yolks and fold into the batter.
  5. In another bowl, beat the egg whites until stiff peaks form and gently fold into the batter.
  6. Divide the batter evenly among the prepared cake pans.
  7. Bake in the preheated oven for approximately 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Once cooled, spread jelly or jam between layers and over the top.
  9. Sprinkle raisins over the icing or incorporate into the batter as desired.
