- Mix the granulated sugar, light brown sugar, eggs, oil, water, cinnamon, baking powder, and powdered cloves in a large mixing bowl.
- Add the flour and almonds to the mixture and stir until well blended.
- Divide the dough into three equal parts and roll each into a rope shape.
- Place the ropes on a greased cookie sheet and flatten them slightly.
- Brush the tops with the beaten egg yolk mixed with a little water.
- Bake at 375°F (190°C) for 20 minutes, until the center is slightly firm.
- Remove from oven and let cool slightly.
- Slice diagonally with a sharp knife to form biscotti.
- Allow to cool completely before serving.
