Ingredients

  • 8 oz. lasagna noodles
  • 2 medium onions
  • 4 cloves garlic
  • 2 cups tomato sauce
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/2 cup chopped parsley
  • 1/2 to 3/4 lb. sliced mushrooms
  • 3/4 cup cooked small red beans
  • 3/4 lb. light mozzarella cheese
  • 2 cups skim cottage cheese
  • 1/2 cup light Parmesan cheese

Instructions

  1. Rinse the cooked lasagna noodles in cold water and set aside.
  2. Sauté the onions and garlic in a skillet sprayed with Pam until translucent.
  3. Stir in the tomato sauce, dried oregano, dried basil, chopped parsley, and salt.
  4. Cook the sauce for about 30 minutes, simmering and stirring often until thickened.
  5. Stir in the sautéed mushrooms and cooked red beans.
  6. In a 9 x 13-inch pan, place a layer of noodles on the bottom.
  7. Spread half of the tomato sauce mixture over the noodles.
  8. Layer half of the sliced mozzarella and cottage cheeses, then sprinkle with Parmesan.
  9. Repeat the layers: noodles, sauce, cheeses, ending with Parmesan on top.
  10. Bake at 375°F for 20 minutes until bubbly and golden.
