  • 1/4 tsp. almond extract
  • several dashes sea salt

  2. Stir the 1/2 cup slivered almonds into the pudding after blending.

  4. Just before serving, sprinkle a few slivered almonds on top of each serving. Almonds may be toasted if desired.
  5. Keeps 5 to 8 days in refrigerator.

Tips & Substitutions

For a smoother texture, ensure your tofu is well-blended before adding the other ingredients. If you don't have carob powder, cocoa powder can be a good substitute, though it will change the flavor profile slightly. Adding a pinch of cinnamon can enhance the taste. If you're vegan, make sure the maple syrup is organic, as some brands may use animal products in processing.

Serving Suggestions

Serve the pudding in individual cups and top with additional slivered almonds for a delightful crunch. It pairs beautifully with Rosamarina Dessert, adding a fruity contrast. For a complete dessert experience, consider serving alongside fresh berries or a dollop of whipped coconut cream for added richness.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 5 to 8 days. If the pudding thickens too much after chilling, simply stir in a little almond milk or water to reach your desired consistency before serving. It’s best enjoyed cold, so avoid reheating as it can alter the texture.

Frequently Asked Questions

Can I use silken tofu instead of soft tofu?

Yes, silken tofu can be used in place of soft tofu for a creamier texture. Just be gentle when blending to avoid breaking it apart too much. The flavor remains similar, and it will still set nicely in the pudding.

Is there an alternative sweetener I can use?

Absolutely! You can substitute maple syrup with agave nectar or honey if not strictly vegan. Adjust the quantity according to your sweetness preference, as different sweeteners have varying levels of sweetness.

Can I make this pudding ahead of time?

Yes, this pudding is perfect for making ahead of time. Prepare it a day in advance and let it chill in the refrigerator overnight. This allows the flavors to meld beautifully, enhancing the overall taste when served.
