Ingredients

  • 1/4 cup water
  • 2 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 egg
  • 1 1/2 cups cooked, mashed or riced potatoes
  • salt
  • freshly ground pepper
  • freshly grated nutmeg
  • 1/2 cup chopped blanched almonds

Instructions

  1. Combine water and butter in a small saucepan and bring to a boil over high heat.
  2. Remove from heat; add flour all at once and beat until smooth.
  3. Add the egg, blending thoroughly.
  4. Let cool slightly. Add mashed or riced potatoes to the flour-egg mixture and blend well.
  5. Season to taste with salt, pepper, and freshly grated nutmeg.
  6. Lightly flour your hands, shape the mixture into tablespoon-sized balls.
  7. Roll the balls in chopped blanched almonds.
  8. Pour oil into a deep fryer or large saucepan and heat to 375°F (190°C).
  9. Fry the balls in batches until golden, about 5 minutes.
  10. Drain on paper towels and serve hot.
