  • 1 cup vegetable broth
  • 1 large can (31 oz.) pork and beans
  • 1 can black beans, drained and rinsed
  • 1 can Great Northern beans, drained and rinsed
  • 1 can mexicorn
  • 1 can Mexican style chopped tomatoes
  • 1-2 Tbsp. chili powder

Instructions

  1. Cook the sliced onion in vegetable broth for 5 minutes.
  2. Add the remaining ingredients to the pot.
  3. Simmer the chili for 30 minutes to blend flavors.

Tips & Substitutions

For a spicier kick, add diced jalapeños or cayenne pepper along with the chili powder. If you prefer a heartier chili, consider adding cornmeal or quinoa to thicken it. You can substitute the pork and beans with any other beans or lentils for a different flavor profile or dietary needs. Feel free to use fresh tomatoes instead of canned for a fresher taste.

Serving Suggestions

Serve this vegetarian chili with a dollop of sour cream or a sprinkle of cheese on top for added creaminess. It pairs beautifully with Kathy'S Spanish Rice for a complete meal. Consider adding some avocado slices or cilantro as fresh toppings. This chili also makes a great filling for burritos or as a dip for tortilla chips.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 4 days. To freeze, place the chili in a freezer-safe container and it can last for up to 3 months. To reheat, simply thaw overnight in the refrigerator and then warm on the stovetop or in the microwave, adding a splash of broth if it thickens too much.

Frequently Asked Questions

Can I make this chili ahead of time?

Yes, this chili tastes even better the next day as the flavors meld together. You can prepare it a day in advance and store it in the refrigerator. Just reheat it gently on the stovetop before serving.

What can I add to make this chili more filling?

To make the chili more filling, consider adding grains like quinoa or brown rice. You can also add chopped vegetables such as bell peppers or zucchini for extra nutrition and flavor.

Is there a way to make this chili spicier?

Absolutely! You can increase the chili powder or add fresh chopped jalapeños or serrano peppers. A splash of hot sauce or diced chipotle in adobo can also elevate the heat and add a smoky flavor.
