Ingredients

  • 2 c. sugar
  • 3 eggs
  • 1 c. oil
  • 1 whole orange, ground, juice and all
  • 1/4 c. crushed pineapple
  • 1/4 c. coconut
  • 1 c. chopped nuts
  • 3 c. flour
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt

Instructions

  1. Beat the sugar, eggs, and oil until lemony.
  2. Add the orange (ground, juice and all), crushed pineapple, coconut, and chopped nuts.
  3. Mix well.
  4. Add the flour, baking powder, baking soda, and salt; mix well.
  5. Pour the batter into greased loaf pans, small or large.
  6. Bake in a preheated oven at 350°F (175°C) until done.
