Ingredients

  • 8 oz. pkg. cream cheese
  • 3/4 c. sifted confectioners' sugar
  • 8 3/4 oz. can crushed pineapple
  • 2 Tbsp. pineapple liquid
  • 1/2 c. heavy cream
  • 11 oz. can Mandarin oranges, drained
  • 1/2 c. packed flaked coconut

Instructions

  1. Cream the cream cheese with the confectioners' sugar and pineapple liquid until smooth.
  2. Beat the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. Add in the drained pineapple, Mandarin oranges, and coconut, folding gently to combine.
  5. Pour the mixture into a baked or graham cracker crust.
  6. Chill in the refrigerator until the pie is firm and ready to serve.
