Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 3 tablespoons sugar
  • 1/4 cup melted margarine
  • 2 packages pineapple jello
  • 2 cups boiling water
  • 1 can crushed pineapple
  • 1 cup diced oranges
  • 1 can Southern-style coconut
  • 1 cup heavy cream

Instructions

  1. Combine graham cracker crumbs, 2 tablespoons sugar, and melted margarine.
  2. Press the mixture into the bottom of a 13 x 9 x 2-inch pan; set aside.
  3. Dissolve pineapple jello in boiling water.
  4. Stir in crushed pineapple and diced oranges. Chill until slightly thickened.
  5. Mix in 1 cup of coconut.
  6. Whip heavy cream with remaining 1 tablespoon of sugar until stiff peaks form.
  7. Fold whipped cream into the jello mixture.
  8. Pour the mixture into the prepared pan.
  9. Chill until firm.
  10. Toast remaining coconut and use as a garnish before serving.
