  • 3 cans enchilada sauce
  • 2 lb. ground beef
  • 2 cans chili con carne

  • 1 lb. shredded Mozzarella cheese

Instructions

  1. Brown the ground beef and drain well.
  2. Mix the cooked beef with chili con carne.
  3. In a separate pan, combine enchilada sauce, 1 tablespoon of oil, and tomato sauce.
  4. Bring the mixture to a boil, then lower the heat to simmer.
  5. Take one tortilla and quickly slide it through the sauce to cover it completely.
  6. Fill the center of the tortilla with some of the meat mixture and sprinkle cheese to taste.
  7. Fold the top down and the bottom up, then flip over and lay in the baking pan.
  8. Repeat the process until the pan is filled with rolled tortillas.
  9. Pour the remaining enchilada sauce over the assembled tortillas and sprinkle with the remaining cheese.
  10. Bake in a preheated oven at 375°F for 30 minutes.
